THE NAME
The terms evidently refers to the shape of the soup pasta, pressed in a mould or extruded in the shape of stars. The same format is salso Astri (stars), Fiori di sambuco (Elderberry flowers), Stellette (starlets) in some regions of Italy. They were mentioned in the writings of Cristoforo Messisbugo (15th Century – 1548), a court carver, which means that he was the superintendet of the kitchen service at the Court of Ferrara, in the first half of the 16th Century.
