THE NAME
The word Macaroni indicates pasta in general, with some differences in interpretation between Northern and Southern Italy.
The word seems to derive from the verb “ammaccare” (to flatten), to beat strongly, as occurs during the kneading phase of production; the generic term Maccheroni al torchio is used for long, narrow formats (like the Bavette) in Southern regions, while in the North Maccheroni refers to short, tubed formats.
