THE NAME
The term gnocco (dumpling) indicates numerous formats today, some of which are very different from each other but all deriving from the original shape of an irregular piece of dough which was torn away from the lump, rolled by hand, and then pulled using the fingers. The Sardinian dumplings is specifically characterized by its small dimensions and the external ribs, and it is called Malloreddus, in the local dialect. This word means calf o or small bull, and probably derives from the Latin malleolus, a word that ancient Romans used to indicate a type of dumplings.
