THE NAME
The name evidently derives from the term spaghi (strings), referring to the shape of the pasta, and this was most likely the first shape to be made with the use of an extruder with simple cylindrical holes. The thinnest formats are also called Capelli d’angelo (angel hair), Capelvenere (Venus’s hair), Fidelini, Sopracapellini, Spaghettini. The cut version was used in soup, rather than in sauces.
