THE NAME
The Italian term refers to ink pens used in ancient times, made from goose feathers cut at an angle to make a sharp point. The pasta format is obtained from a smooth or ribbed tube of pasta, variable in length, which has the characteristic diagonal cut typical of the ancient writing pen. They are also called Mostaccioli, Penne a candela (candle pens), Penne di ziti, Ziti tagliati.
