THE NAME
The term refers to the elbows of clothing because of the tube shape. It exists in different dimensions and variations: Maniche di frate (friars’ sleeves), Maniche rigate (ribbed sleeves), but also Bombardoni (referring to the the shaft a bombarda. An Early Music instrument similar in shape to an oboe, and also a type of Renaissance gun). In Umbria and Marche they are called Moccolotti, that means candle butt, in Campania, in the large format, Pàccheri, an onmatopeic word that describes the sound of slapping. They are stuffed with cheese, meat, or vegetables and baked in the oven like Cannelloni.
